Elisé was a vision God gave me 12 years ago.I was at a restaurant, and as I looked around, I remember telling my family,
“This is how I would like my tables and chairs to look when I own my restaurant.”
I was a paralegal at the time and worked at a law firm; and in 2012, I went through a complicated divorce-
Battling with depression, anxiety, rejection, fear, anger, frustration, a very heavy oppression.
I decided to leave the firm and start working for my parents at Umbertos Italian Grill. At the time I weighed 230 pounds, suffered from excruciating back pain, and couldn't even pick up my own children! I remember the day so clearly; my son had asked me to carry him, but my daughter Eliana turned and told him that I could not carry him because my back was in pain. My heart burned when I heard her say that...
That's when I knew I needed a sense of urgency to change my health and body.

Working at my parent’s restaurant taught me character, customer service, financing, and all the skills I use today.In 2016, I deeply desired to get much closer to God, so I started The Daniel fast!
(Only fruits, vegetables, and legumes. No animal products.)
I made my almond and coconut milk, and prepared delicious vegan recipes from scratch at home. That really changed my ways of eating- I even lost over 90 pounds, and I could now carry my children!
In 2020, when COVID hit, we closed Umbertos for 3 weeks. God reminded me of my desire to open up my restaurant during that time. (even though we were in a pandemic). There were so many restaurants and businesses closing, but God had other plans for me. Opening the business took work. Construction took over a year and a half to build. But during that time frame, God was preparing me. God was stretching and massively growing my faith.

Elisé means "God is my stronghold, and God is my promise."
Elisé opened its doors in May of 2022
The name came from both of my children’s names combined, Eliana and Sebastian. Looking for alternative vegetarian meals at other restaurants has always been a challenge for many families; so The Menu at Elisé Cuisine was created to fit all guests! Meat-friendly options include chicken and turkey, as vegan, vegetarian, and gluten-free options. Now all families, friends, and loved ones can share a nice meal, not just eating sides.

We at Elise Cuisine believe in transforming lives not just through food, but through services like the Transitional Living Program.The Transitional Living Program provides shelter for men age 18 years and older that assists in reintegrating them back into society after being released from prison/homeless state. This program also helps young adults who have been referred by other agencies, are transitioning from juvenile detention, out of foster care, live with distraught parents, or who have been struggling due to chemical abuse and dependency.We also partner with them to provide employment, food, water, and prayer- serving both at our restaurant, and around San Antonio!
Additionally, we ensure that anyone in need can receive a Bible and a prayer devotional to help guide them through the struggles in this life.
